Ohmylordygoodnessgoshgolly do I have a yummy recipe to share with you all!
I've been on a pancake kick for almost all my life - I freakin love them. Something about those silver dollars that just makes my taste buds sing. But one morning I got a hankering for some french toast..which was odd. I didn't grow up eating it, hadn't seen an ad for it at IHOP lately, had no idea were the craving came from. I just woke up one morning and decided I wanted some! So I did some snooping around the internet, took a couple of recipes, and made my own! It's high protein, under 300 calories, and delicious.
Protein French Toast
- 2 slices of bread of choice (I used Ezekiel 4:9)
- 2 egg whites
- 1/2 scoop vanilla protein powder
- 1 tsp cinnamon
- 1 tbsp unsweetened almond milk
- 1 packet of Stevia
Mix all the ingredients (except the bread) into a shallow Pyrex dish or bowl. Dip one slice of bread at a time and smother and slather it to death. Plop it on a preheated, medium heat skillet, and repeat with the other slice. With the extra mixture, pour over the slices and poke holes in them so the mixture soaks even more into the bread. Flip after about 90 seconds, and cook to desired firmess. Top with whatever fits your calories/macros. (I used Walden Farms Pancake Syrup)
Viola! This sucker will fill you up and make you feel awesome.
Anyhoot, life is going along swimmingly. I recently was hired at GNC and have been balancing that and going to school at the community college, which means a lot of meal prepping. (But also means more recipes to share!) I sometimes have moments were I reflect on what my life would have been like right now if I had decided to stay at Fullerton..but then I remind myself that right now I'm accomplishing my goals, and staying there just would have delayed that.
